The City of Monroe License Committee met on August 24, 2026 at 4:45 PM in Council Chambers. The committee discussed and unanimously recommended approval of two premise extension applications: one for Baumgartner Cheese Store Inc. to expand into an adjacent dining room, and one for Suisse Haus for an outdoor beer garden during Cheese Days. C.2 Baumgartner Cheese Store Inc. Class B Premise Extension - Representative Tyler explained that Baumgartners is leasing space in the adjacent Eugene Hotel building. They have created cutouts connecting to a new kitchen and dining room with seven booths. An internal passageway will allow hotel guests to access Baumgartners without going outside, and future plans may include room service for the 25-room hotel. The committee had no further questions and unanimously (3-0) moved to recommend to Common Council.
C.3 Suisse Haus Outdoor Beer Garden and Premise Extension Application - The committee considered a request for an outdoor beer garden in the back parking lot during Cheese Days. This year, the entire block around Suisse Haus will be an open container zone as part of the event, so no barrier is needed, but a tent will be set up. The request is limited to the parking lot only, unlike previous years that included street space. The committee unanimously (3-0) moved to recommend to Common Council.

And Alder Mosier. Does anybody have any corrections of the minutes? If not, they'll stand as presented. Now to business, uh, the first uh discussion and possible recommendation to common council of the jailhouse taps premise extension and beer garden application. They have discontinued that uh that uh license request. So we are skipping that. Next discussion and possible recommendation to common council of the class B premise extension for Baumgartner Cheese Store Incorporated. So in front of you guys are um series of documents and an application for them, their request to extend their premise into a dining room that they are leasing from the Eugene Hotel space. Um with that, I submitted you guys with the documents showing that they are able to do that within the Department of Revenue Regulations on that. Um if you guys have any questions for it. I know Tyler's here, he might be able to answer some of those questions for you regarding that. Yeah, if you wouldn't mind just giving us an overview. I mean, I read it, but I just want to make sure that I understand it. Yeah, please, thank you. Um we are renting the space on the southern wall of Baumgartners inside of the Eugene Hotel building, but it's directly adjacent to Baumgartners. Um we already did an easement so that we have two cutouts, one that goes through into a new kitchen in the back, and then another that goes through into the new dining room. Um I don't know if you if you go into bum gardeners and you look right now, there's like a display with t shirts and stuff on it that's hiding the cutout for the dining room connection. Um but through there, there's gonna be like it's at different levels. There's two steps down into the new dining room, and then we're gonna have seven booths along the walls out in there to start off with, and then if we feel like that after a little bit and have enough space, we might add some more tables. But that's essentially it. So this is just a permanent extra space for Baumgarteners. Yes, correct. And is it gonna be doing anything with the hotel? Are you gonna so there's uh there's an internal passageway from the hotel so that the hotel guests can come into Baumgartners without having to go outside? Um eventually we're the plan is to provide room service for the hotel. So the hotel wanted room service. Um 25 rooms doesn't really justify building a kitchen to provide room service or anything. So we were trying to figure out a solution to that, and connecting the two was the easiest way that we could figure out to do it. I mean you could just do like a mini door dash kind of thing, right? Or delivery drive. Yep, people can definitely still order delivery from other places and everything, but okay. Any other questions? What was in the plan all along when they were building the hotel? Did they know that while they were building the hotel? Yeah, this this has been the plan all along. Um to be honest, we forgot to apply for the extension because it just got missed. Yeah, we discussed it like two years ago. Yeah. I make a motion that we move this to council. I'll second. Any further questions? If not, if the clerk would please call the roll.
