2:30Yeah, I've had nothing since I've paid my debt to society.
2:34Now I did uh six years in in prison, so I mean I've I've planned paid my debt plenty, so and I don't plan on doing that again.

6:58I mean, this looks like I guess it's two, right?
7:02And with the latest being about two years ago.
7:06Um it's about three years.
7:07Because it was uh April 19th, 2023, and it's 2026 now.
7:15I just celebrated my three years, so um, I went through a uh adult and teen challenge program for a year, which is the complete abstinence of all narcotics at anything that is like destroying your body and your health and all that, and then um I just I I just keep like I just talk to them regularly if I'm having problems or whatever else.
7:38I mean, I haven't wanted to go back.
7:40I saw what it destroyed my family and me, and I don't ever want to go back to that.

7:58Have you ever held a bartender's license before?
8:01No, first time, okay.
8:33Um given that it has been uh three years since your last and and about ten years since your your prior one.
8:44Um I generally assume nobody's doing this for nobody's trying to be a bartender for nefarious purposes, and when you say you've cleaned up, I I tend to uh take you at your word for that until you make a mistake.
8:58So that being said, I will make a motion to approve your application.

13:09Yes, so after this happened, uh so we have like the ID scanners, like the really nice ones.
13:14We were using them three days a week because I have bouncers on each door Thursday, Friday, Saturday.
13:19Um, and then they were out all the time, but they weren't always used all the time besides those days.
13:24So I had basically a course with my bartenders how to use those because they are stupid proof.
13:29Um you scan it and it will tell you a big red no comes up if it's not right.
13:36If it's a fake, if it's the like wrong birthday.
13:40Um so we had a crash course with that, and so everyone now is using it a hundred percent of the time, not just the bouncers anymore.

15:05I'm Tyson Beck, the managing partner of the restaurant.
15:12You are both in here because you actually have two compliance failures.
15:19One was from, I believe it was December of 2024.
15:24And one was from September of 2025.
15:33I guess what's happened and what are you guys doing about it?
15:38So on the most recent the last failed sting, uh our team member had had the ID and asked the gentleman if he was over 21.
15:50And we found out afterwards when Adam was a the team member when he looked at the ID, he did not look at the correct date.
15:56He looked at the um the issue date, but not the birth date.
16:00So he was confused, he got confused regardless.
16:04So he as our policy is anybody that served on that serves anyone under 21 gets termed, so he's no longer with us.
16:10We have worked a lot with our uh both our bartenders and our team members on uh how to uh properly you know um read an ID as far as you know birthdays and stuff like they have where the years on the top or the the where the dash is is the year that they're born in, etc.
16:27We also have the ID guidebook, and then anybody who's 30 or under.
16:30Um, or if it's an out of state ID, typically uh our team members will come and get the managers and then we'll check we'll validate the IDs as well.
16:38You guys have any ID scanners or it's just all it's just usually this manual we have.
16:42Uh we do have the that's an ID book that uh comes exactly where we from corporate, I believe.
16:48Yeah, we get it from the buttons in there.
16:50That's uh a reference book that we have inside the cabinet of our bar.
16:54We have it like easy accessible in case because we got Carroll College near us, so we've had students with uh Nevada licenses, Idaho, uh Florida, a lot of Illinois too.
17:08Um questions from the committee members.
17:17Actually, I was gonna ask Brian.
17:20Um, what's the threshold for when we can seek penalty?
17:26Is it three failed compliance checks within a two-year period?
17:33No, it's two failures in a one-year period.
17:38Um when you're talking about renewals, you can refuse to renew a license for any violation of chapter 9 or chapter 125, but that one in particular serving underage uh requires two failures within a one-year period.
17:58And then you can use that as a basis to uh refuse to renew or revoke or suspend even.
18:05That's the one exception.
18:06All of the others uh do not require two strikes within a one-year period.
18:12Okay, but that of course is the nuclear option.
18:17And what you want to see in these cases is some evidence that um I mean, largely it's a management and training problem.
18:26It's it's the initial training and then it's the supervision.
18:30Um so what you're looking for is evidence that the management is on top of it and is uh properly instructing and supervising their employees, and it sounds like in this case they reacted by uh terminating one of them.
18:46I know there was uh two separate individuals.
18:50Okay, well, uh it would be my opinion that that's what you're looking for.
18:55Yeah, I I wasn't suggesting that we take that action.
18:58I just wanted clarification on whether they met that threshold or not, and a reminder of what that threshold was for the right for the record.

25:26Yeah, so for a first offense, they get a three-day suspension, and then a second, and that continues a one-year rolling period.
25:35The second offense would be I think it's a five-day suspension, and the third one is termination within a year.
25:42Um so I mean, I just um I know for me personally as a manager.
25:47I just try to talk about it as much as possible.
25:49We have every month um a coworker assigned visits every store, kind of just undercover and does ID checks and um so we try to stay on top of it and you know just talk about it as much as possible.

27:58Yeah, so we all be we kind of right after we opened about six months after we first opened a year ago, we decided to start opening up the vinyl lounge, which would be right next door.

28:12Like we just were waiting to do them both at the same time.
28:15So now we're getting to completion of the vinyl lounge.
28:19So we that's why that's on the docket, too, I believe.
